Must See Excursions for Australia/New Zealand

I am planning a cruise to Australia and New Zealand on board the Celebrity Solstice. I am wondering if anyone can enlighten me on the must see shore excursions for each port. Would it be advisable to purchase these excursions through Celebrity or through a third-party company? Thank you for your input.
